This is my second post of a meal I've done. The only requirement given to me was to have steak and rack of lamb for 16 people. This would be the biggest group size I've ever cooked for, so I thought of a simple menu that would taste good and easy to bang out for 16.....but I was wrong.
Here's the menu:
Tomato with fresh mozzarella and basil with sherry vinaigrette.
Cream of asparagus soup with parmesan puff pastry. This was a disappointment. The asparagus I bought wasn't too tasty and the flavor just didn't come out the way I wanted it to.
Bangus fish cakes with grapefruit salsa and salad with roasted peach puree and pancetta. I actually like the salad, the dressing was sweet and the pancetta was salty. I fried the fish cakes before dinner and heated them in the oven, but it dried out because it was in too long. It was a pity because it was really tasty.
Rib-eye steak with onion flan (underneath, you can't see it), sauteed mushrooms, and red wine sauce. I hid the flan underneath because most of them were breaking when I umolded them. It tasted pretty good...just looked ugly.
Roasted rack of lamb with seafood paella. The lamb was perfectly cooked, it's what I'm most content about. The pealla on the other hand wasn't anything special. It's the first time I made paella without the tomato shortcut, next time will be fantastic.
Cantaloupe sorbet with Sauternes. This was good, it felt very fresh and refreshing after a heavy meal.
Green tea and vanilla bean panna cotta with strawberry coulis. This was supposed to be my favorite dish, but it turned out a disaster. The night before when I made it, I was happy, the portioning and the taste was perfect. When I tried to unmold it today, it was so difficult to handle. I didn't put enough gelatine that it was too soft. On the plate it looked like a mess. At least the least the taste I wanted was there.
Overall, the guests raved about dinner and their plates came back about 95% empty. I'm glad they enjoyed the meal, however, I wish it could've been better, like the way I had it in my mind. It's was just one of those days, but I definitely learned a few things for my future meals.
