cookies made with love

I have been wanting to eat my chocolate oatmeal cookies, but always seemed to have trouble finding the time to make them.  On this rare three-day long weekend, I made them!  I used agave instead of sugar.  I have been curious for awhile what it would turn out like.  I also used organic whole wheat flour, free-range eggs, organic rolled oats, and Valrhona chocolate.  I'm quite content with the result.  It's not as sinful as my usual cookies and  it's a little softer because of the higher moisture with using the agave, but it's still a good cookie.  I was pleasantly surprised that people liked it just as much as the ones I used to make and it also disappeared from the tray just as fast.

Tomorrow.....churning my lavender ice cream....also made using agave and free-range eggs.

    looks yummy! i'm afraid i'd eat more cookies than usual since they're healthier. haha
